Start by quartering peppers and removing the seeds and membranes. Place peppers on a broiler pan and cook in the oven at 500ºF until the skins blister and turn black. (You can also accomplish this on the grill, or over a open flame on a gas stove.) After blackening, place peppers in a sealed paper bag. Once cooled, the skins will slip off and peppers are ready to be used in recipes or eaten on bread with olive oil.
