1 LB Hamburger
20 crushed Saltine Crackers
1 Beaten Egg
1 small onion (optional)
Salt
Pepper

Directions:
Directions:
Place uncooked hamburger in bowl. Put Saltines in a zip lock bag and roll with rolling pin to crush. Add crushed Saltine Crackers to hamburger. Mix in beaten egg. Dice onion in small pieces and add to hamburger mixture if desired. Add salt and pepper to taste. Place two forks in bottom of pan so meatloaf will not cook hard on the bottom or stick to the pan. Mix into shape of a loaf and place in loaf pan on top of forks.. Bake 300 º 1 hour or until inside of meatloaf is well cooked. Serve with Ketchup.

My husband, Dick, is adamant that Meatloaf should be filled with meat, not rolled oats or other fillers just to stretch the hamburger. He always used to ask what was in the meatloaf. After 38 years of marriage, he trusts me now that there will be nothing (except a few Saltines) in his meatloaf now.!! Also, when I worked at Sleeping Rainbow Guest Ranch in the summer of 1965, the Chef liked to make left-over meat loaf sandwiches to send with the guests who were going out on the day trips.....just bread, butter and left-over meatloaf makes a great sandwich.
