1 lb spicy Italian sausage
1 Jar (26 oz) marinara sauce
3 c ricotta cheese
1 can (4 oz.) chopped green chilies
1 tsp. Italian seasoning
1/2 tsp. garlic powder
1 pkg. uncooked manicotti shells
1 can (28 oz. ) crushed tomatoes
2 eggs, beaten
3/4 c. minced fresh parsley
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. shredded mozzarella cheese

In a large skillet brown sausage, drain and set aside. In the same skillet bring tomatoes and marinara sauce to a boil. Reduce heat; cover and simmer for 10 minutes. Meanwhile in a large bowl combine eggs, ricotta, Parmesan cheese, chilies, parsley, Italian seasoning, salt, garlic powder, and pepper. Put 1/2 sauce in a greased 9X13 dish. Stuff uncooked manicotti shells with cheese mixture. Place in prepared dish. Sprinkle with sausage and top with remaining sauce. Cover and bake at 350º for 50 minutes. Uncover, sprinkle with mozzarella cheese. Bake 10 minutes longer or until cheese is melted and manicotti is tender

I usually stuff the uncooked manicotti shells by placing the cheese mixture in a gallon ziplock bag and cut one corner off, then squeeze the mixture in the shells.
