Directions:
Preheat oven to 450 degrees
Rub roast with the dried dressing. Insert meat thermometer and place roast (bone side down and fat side up) in a shallow pan. Start the roast at 450 degrees for the first 30 minutes. Then reduce oven to 325 degrees and roast in oven until meat reaches the correct temperature - about 13 - 15 minutes per pound.
140 degrees - rare
160 degrees - medium
170 degrees - well done - don't go there
Once the roast is pulled from the oven, cover it with aluminum foil and let it set for at least 20 minutes.

While roast is resting, drain 1/4 cup of the drippings into a small pot. Add beef broth, Worcestershire sauce and wine. Bring to a boil then simmer until ready to serve.
Carve roast and serve with au jus over the top.

My sister Michelle showed me how to do this. I have yet to find a better way. This is great with Yorkshire pudding.
