4 large potatoes
1/2 t. salt
1 T. butter softened
2 eggs, beaten
1/2 farina
1 cup flour

12 Italian plums
12 sugar cubes

1/2 cup melted butter
1/4 cup sugar
1 cup dry plain bread crumbs

Directions:
Directions:
Cook and cool potatoes. Peel the potatoes and press them through a ricer. In a large bowl mix together the potatoes, salt, egg and1 T. butter until well blended, Gradually add in the farina and flour (if the dough is still wet add additional flour).

Turn dough onto a floured surface and knead until smooth, about 5 minutes.

Split open each plum and remove the pit. Replace with a sugar cube and close.

On a floured surface, roll out the dough and cut into squares. Place a plums into each square and bring the corner's around the top, pinch the seams together to seal.

Bring a large pot of water to a boil. Place dumplings, a few at a time, in the boiling water; once they float to the surface, continue cooking for about 5 minutes. Transfer cooked dumplings to a covered bowl to keep warm.

Melt 1/2 cup butter in a skillet; stir in bread crumbs and 1/4 cup.sugar. Cook and stir until browned. Remove the browned breadcrumbs to a plate and roll warm dumplings in the mixture.
