Put a whole chicken (roasting) in a large pan and cover with water. If you prefer greater flavor, use half water and half chicken broth. Add celery, carrots, onion and parsley. These will all be discarded later, so you don’t have to chop them up finely. Season with salt and pepper (I prefer sea salt).

Bring mixture to a boil, then turn down burner and simmer for 20-30 minutes or until it’s obvious chicken is done. Remove chicken and let it cool before you remove skin and bones (discard! Too fatty!). Break chicken into pieces and set aside.

Add chopped celery, carrots, onions and parsley to the liquid--no particular amounts; just what looks like enough. Simmer vegetables until soft, about 20 minutes. Add noodles or tortellini to vegetables in liquid. Simmer until they are done, usually about 10-15 minutes, but check package directions. Then add chicken pieces, season with sea salt and pepper. Correct seasonings and you’ve got an easy, delicious soup!
