2 3/4 c flour
3/4 tsp baking powder and baking soda
1/2 tsp salt
1/2 c sour cream 1/4 c milk
1 1/2 Tb grated lemon zest
4 Tb lemon juice
3/4 c butter (softened)
3/4 c honey
1/2 c sugar
3 large eggs

Frosting:
1 c butter (softened)
1/4 c honey
1 1/2 Tb lemon zest
4 c powdered sugar
7-8 Tb lemon juice
2 drops of yellow food color

Preheat oven to 350º. Line cupcake pans with paper liners (makes 24 cupcakes)

Bowl 1:
Whisk together flour, baking powder, baking soda and salt.

Bowl 2:
Whisk together sour cream, milk, lemon zest, juice

In a mixer cream butter, honey and sugar until light in color. Add eggs, one at a time until blended. Start with flour mixture, add 1/2 of flour, mix well. Add 1/2 of sour cream mixture. Repeat until all ingredients have been blended "Always end with flour"

Fill the cupcake holders and bake for 18-20 minutes.
Frosting:
Add all the ingredients, blend until smooth. If icing is too thick, add 1 Tb of milk.

Frost the cupcakes when cooled.
