One 3 1/2 - 4 pound loin of pork, bones trimmed but not removed.
3 Tablespoons fresh rosemary leaves, minced, plus
1 - 2 teaspoons freshly chopped rosemary leaves
2 Tablespoons finely chopped fresh garlic
1/2 teaspoon kosher salt
1/2 teaspoon coarse black pepper

Directions:
Pat pork loin dry with paper towels. Make a course paste of minced rosemary, garlic, 1/2 teaspoon kosher salt and 1/2 teaspoon coarse black pepper. Spread paste over the pork loin and let stand for 1 hour. Preheat oven to 325º. Roast for 1 1/2 hours or until a meat thermometer reads 155º. Add a little boiling water and chopped rosemary to the pan juices.
