1 cup whole wheat flour
1/2 cup all-purpose flour
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 egg
1 3/4 cup milk
2 tbsp. vegetable oil
1 cup bran flakes cereal, crushed (decreases to 1/2 cup)
1 1/4 cups fresh or frozen berries (Saskatoon or blueberry)

Directions:

Stir together flours, sugar, baking powder & salt. Set aside. Beat egg in medium bowl. Stir in milk, oil & crushed cereal. Let stand 5 minutes. Stir again. Add flour mixture & berries to milk mixture, stirring until just combined. Pour batter onto lightly greased pre-heated skillet, about 1/3 cup per pancake. Cook until bubbles form on surface & underside is brown. Turn & cook until browned.
Serve immediately with syrup, or whipped cream for special occasions.
