Wontons

1/2 Pound lean ground pork
1/4 C minced onion
1/4 C minced celery
1 T soy sauce
1 Egg
1 tsp corn starch
24 wonton wrappers
2 quarts of water.

Soup

6 C chicken broth
1/2 tsp salt
1/4 tsp white pepper
1 1/2 C mushroom (optional)
1/2 pound spinach
24 cooked wontons
1/2 C finely chopped green onions

Directions:
Directions:
Combine pork, onions, celery, soy sauce, egg , and cornstarch in a large bowl. Mix well. Place on teaspoon on the wonton. Dampen one side of a wonton wrapper with water. Fold wonton in half to form a triangle. Pinch sides closed to form a seal. Repeat with remaining wrappers and filling. In a large saucepan bring to a boil 2 quarts of water. Carefully drip wontons into boiling water. Bring to a boil again and cook 8 minutes. with a slotted spoon, remove wontons from water and drain. Wontons are now ready to be added to soup.

In a large saucepan, combine chicken broth, salt, pepper, and mushrooms. Bring to a boil. Cover and simmer 5 min. Thoroughly wash spinach, trip and shred into small pieces. Add spinach and cook wontons to broth and bring to a boil again. Simmer for 5 minutes more. Ladle into soup bowls and top with chopped green onions.
