2 C flour
1 tsp baking soda
1/2 tsp salt
1/2 C butter (or 1 stick)
3/4 C dark brown sugar
2 eggs
3 ripe bananas
1/2 C walnuts finely chopped

Preheat oven to 350. Lightly grease your bread tins. In a large bowl, combine flour, baking soda & salt. In a separate bowl cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. then fold in the walnuts. Pour batter into prepared loaf pan. Bake in preheated oven. Depending on what kind of pans you use. I always use mini bread pans and bake them for 3o min. But if you are going to use regular sized pans, bake them for 60 min. Insert a toothpick in middle to make sure the middle is baked completely.

Using mini pans allows the bread to bake faster & bake properly. I like to have moist banana bread and I ALWAYS store it wrapped in parchment paper. We love to make this on birthdays and serve warm with a scoop of vanilla ice cream.
