Chicken cutlets
Egg
Flour
Corn starch
Scallions
Mushrooms
Butter/Marg
Lemon
Sherry/white wine

Directions:
Directions:
Clean cutlets. Put 1 stick butter or margarine on low. Dip chicken in egg then flour. Cook in skillet. Don't brown or overcook. Take chic out.

4 scallions chopped, mushrooms chopped (saute in drippings for about 5 minuets (add more butter or marg. if needed). Take veg. out. Add 1/2 c freshly squeezed lemon. 1/2 c sherry or white wine, 1/2 c water, 1 T corn starch or flour. Mix in with drippings over heat for about 5 minuets. Place chic back in pan, put veg on top. Simmer for 1/2 hour covered.
