3 cans Kidney beans
1 cup Bulgar wheat
1 cup tomato juice (heated to a boil)
4 cloves garlic
1-1/2 cup chopped onions
1 cup chopped celery
¼ cup green pepper chopped
3 Tbs. Olive oil
2 cups canned chopped tomatoes
juice of ½ lemon
1 tsp. Ground cumin
1 tsp basil
1 tsp chili powder
salt & pepper to taste
3 Tbs. Tomato paste
3 Tbs. dry red wine (optional)
dash cayenne

Heat beans in a large pot at a low temperature. Soften carrots and celery in microwave in ¼ cup water for 4 minutes. Allow bulgar to stand in hot tomato juice for 15 minutes. Sauté onions and garlic in olive oil. Add carrots, celery and spices. When vegetables are almost done, add peppers. Cook until tender. Combine all ingredients and simmer about 1 hour.
