2 cups cooked rice
5 eggs
1 qt. whole milk
2 tsp.vanilla
1 cup sugar
1/8th teaspoon nutmeg
1 tsp cinnamon
raisins optional
1/2 tsp salt

Directions:
Directions:
Precook rice (follow directions on package),
In mixing bowl beat eggs, add milk, sugar, vanilla, salt & 1/2 tsp. cinnamon, mixing well. Place rice in medium baking dish.
Next step is very important...Place baking dish into a shallow pan with water. Put pan into a preheated oven at 400 degrees for 5 min. then lower heat to 375 and bake for 1 hr. Pudding is done when knife comes out clean. Custard like consistency.
