Ingredients: 1 (16 ounce) package frozen raspberries,thawed 1 (16 ounce) package frozen strawberries, thawed 1/2 cup cornstarch 1 cup granulated sugar 1 cup cold water 2 tablespoons lemon juice

Directions:1. Puree the berries in a food processor 2. Dissolve the corn starch in the water 3. Stir the corn starch in water,the sugar and the pureed berries over medium heat until boiling 4. After mixture boils,keep on heat for one minute longer until thick 5. Remove from heat and stir in lemon juice 6. Pour into serving cups and refrigerate for approximately 2 hours. 7. Serve with either half and half or whipped cream |

Notes: This is a recipe for a dessert that my maternal grandmother made all the time. Her mother was Danish, and that's the origin of this recipe. I suppose its origin is because they have a lot of different types of wonderful berries in Scandanavian countries. You can really make it with any type of berry, I guess. My grandmother knew how to make this by heart. It's probably one of those recipes she learned by watching her mother make it over and over, so she never really wrote the recipe anywhere. Anyway, I couldn't leave it out of any collection of recipes. So, I searched the internet and found something that I thought was similar and made it. It wasn't quite the same, so I've adjusted the recipe to include a bit more sugar. I think that would be more like the pudding I remember.
