1 Pkg Spiral Pasta,
2 red bell peppers,
green onion sliced,
1 jar artichoke hearts, drained,
1 Pkg feta cheese, crumbled,
fresh tomatoes, diced,
Bunch fresh basil and parsley, chopped,
1 can sliced olives,
3 -4 cloves garlic, minced,
pine nuts toasted, 3/4 to 1 cup olive oil.

Day before: Broil bell peppers until black, turning constantly so blacken evenly. Put in airtight container( or ziplock) for 1/2 - 1 hour so they can sweat. When cool, peel skin off, clean out seeds and slice. Marinate overnight in olive oil with crushed garlic and fresh basil.

Serving day: Cut up veggies, assemble salad. Garnish with sprigs of parsley and / or basil.
