Ingredients: 2 (12 oz) packages ground sausage, 2 (8 oz) cream cheese, softened, 2 (8 oz) packages cheddar cheese, 2 tsp fresh cilantro (optional), 1 tsp minced garlic, Chopped green onions, 30 jalapeno chile peppers, halved lengthwise, 1 lb. sliced bacon, cut in half (optional, soak bacon in honey first)

Directions:This recipe for stuffed jalapenos that are always anxiously requested, a hit at every party! Use toothpicks to secure the bacon around the stuffed jalapones. Be sure to use a pan that won't let the bacon drip all over the oven while cooking.
Preheat oven to 375º.
Place ground sausage in a large , deep skillet. Cook over medium high heat until evenly brown. Drain sausage and place in medium bowl. Mix with the cream cheese and other ingredients. When cutting or seeding hot peppers use rubber or plastic gloves to protect your hands. Avoid touching your face. Cut jalapeños in half lengthwise. Remove the seeds. After slicing the peppers and cleaning them out, drop in boiling water for 4 -6 minutes. Thiswill pretty much take all the heat out thouh so if you want a punch, leavethe membranes. Stuff each jalapeño Half with equal portions of the sausage and the cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks. Arrange wrapped jalapeños on a large, shallow broiler pan to catch grease. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown. |
