1 three - four pound beef chuck roast
4 potatoes, peeled and quartered
6 carrots, peeled, and sliced into chunks
1 large onion, peeled and quartered
1 envelope dry Lipton Onion Soup Mix
Water
Salt and Pepper to taste

Directions:
Directions:
Brown roast in oil. Place roast onto a slighly raised rack, in a roasting pan. Sprinkle soup over roast. Place vegetables and water into the roasting pan. Season roast with salt and pepper to taste. Add enough water to bring up the level to the bottom of the roast. Cover and roast at 325º for 1 1/2 - 2 hours, or until roast pulls apart easily with a fork.
