2½ lbs. lean pork (tenderloin)
2 tbsp. salad oil
1 large onion, chopped
2 cloves garlic
1½ cups chopped tomatillos
1 can (7 oz.) California green chiles, chopped
1 tsp. marjoram leaves
1 tsp. salt
1/4 cup lightly packed cilantro
1/2-1 cup water
Fresh cilantro or fresh tomatillo wedges
Hot cooked rice
1 cup sour cream (optional)

Trim pork and cut into 1-inch cubes. Fry over medium high heat until browned. Push meat to side of pan and add onions. Cook until limp. Stir in garlic, tomatillos, chiles, marjoram, salt cilantro, and water. Cover and simmer until tender, about 1/2 hour. Spoon into serving dish. Garnish with cilantro and serve with rice and sour cream.

This is an easy recipe. It has lots of flavor. I usually serve it with warm flour tortillas and shredded cheddar or mexican cheese. CMB
