1/2 cup butter or margarine
6 leeks (wash well)
3 medium potatoes, peeled and cubed
3 quarts boiling water
2 bay leaves
1 tbsp. salt or to taste
1 tsp. white pepper

Directions:
Directions:
Heat 1/4 cup of the butter in a deep kettle. Chop the green part of the leeks and sauté them until they are soft. Add the potatoes, the water, bay leaves, and salt and pepper. Simmer uncovered for 30 minutes. Puree the mixture in a blender until it is smooth. Chop fine the white part of the leeks and sauté them in the remaining 1/4 cup butter until they are golden and tender. Add to the soup and mix well.

I started making this as a starter for Christmas Eve dinner several years ago. It's also good anytime you want to make a soup. It's an easy recipe and doesn't take long to cook. CMB
