Ingredients: 1 head cabbage – either Napa or Purple cabbage are great 1 hand full of green onions diced I hand full Italian flat leaf Parsley chopped 2 spoonfuls Dijon mustard 2 spoonfuls Sherry vinegar 1 Jalapeño diced 1 Garlic clove diced

Directions:Shred or cut very thinly the cabbage (like slaw). Mix chopped parsley and green onion together and set aside.
For the vinaigrette: recipe should yield 1/4 cup. Toss together two spoonfuls of Dijon mustard, the same proportion of Sherry vinegar and some diced jalapeño and one diced garlic clove. Slowly whisk in oil to make a vinaigrette. Whisk until emulsified.
Add vinaigrette to the slaw. You want to let this ‘marinate’ or infuse for 2 hours or overnight is even better. |
