Ingredients: 4 c. kosher salt 2 gallons water nice clean 5 gallon bucket that you`ve never used for anything else and won't use for anything else!

Directions: |
Directions:Place the salt and the water in the 5 gallon bucket and stir to dissolve the salt. Place turkey in bucket and use ice to add to water if the water does not completely cover HIM. Put in the cold garage and brine for 6 hours. Take HIM out of water and pat dry with paper towel. Place on a tray and refrigerate overnight, uncovered (this will help the skin to be nice and crisp when roasted). Brush on olive oil and sprinkle with coarse black pepper. Cook turkey in pre-heated 500º oven for 30 minutes. Reduce oven temperature to 325º and bake until interior temperature reaches 154º. Take out and let set for 30 minutes in which time the temperature will go up about 10 more degrees. Carve. |

Notes: Quote from Paul "you've got to have a temperature probe" (the kind that you put the probe in the bird and the digital display rests on the counter top). Another good tip is to take turkey out of refrigerator 2 hours before you are going to bake him so the bird is not ice cold when you put him in the oven.
