12 medium potatoes peeled & cooked (must be hot)
1 pkg (8oz.) cream cheese
1/4 cup margarine
1/2 cup sour cream
1/2 cup milk
2 eggs (lightly beaten)
1/4 cup chopped onion
1 tsp salt
1 dash pepper

Preheat oven to 350º

After cooking potatoes mash them, when lumps are gone, add cream cheese in small pieces, then margarine. Beat well till mixed. Then mix in sour cream.

In separate bowl mix eggs, onion and milk. Add this mix to the potatoes along with salt & pepper to taste.

Spoon into 9" greased casserole and refrigerate over night or freeze.

Bake at 350º 45 minutes (if frozen defrost first).

I have made these potatoes every Thanksgiving since I moved to Florida. (Wow! I can't believe it's 14 years).
They take a little longer than regular mashed but they are well worth it. However one of the reasons I don't make them often is the calorie content hits the sky!!! so when I make them I use low fat sour cream and cream cheese, skim milk and egg beaters and they are still fabulous.

I love this recipe because you make it a day ahead of time, one less thing to do on the holiday!
