1 pound ground beef
1 chopped onion
1 bag frozen chopped spinach
1 package Brown rice, cooked
1 egg
4-6 peppers (tops cut off and hollowed out)
1 can stewed tomatoes

Directions:
Directions:
Cook brown rice prior to beginning.

Preheat oven to 350 degrees.

Brown ground beef in skillet, add chopped onions, and continue to cook.

Add frozen spinach and cooked brown rice. Heat through. Crack and whisk in egg. Add salt and pepper to taste.

Place all peppers on baking dish, fill peppers with mixture. Pour stewed tomatoes over peppers.
Cover dish with foil.

Cook 15 minutes in 350º covered, then remove foil and cook 30 minutes more.
