2 tbsp. butter
1 lb bay scallops
3 tbsp. lemon juice
1 tbsp. chopped parsley
1 1/2 tsp salt and pepper each

Directions:
Directions:
Heat 2 tbsp butter in nonstick skillet over medium heat. Add 1 lb bay scallops and saute for 2 minutes. Stir in 3 tbsp of lemon juice, 1 tbsp of parsley and salt and pepper.

Serve over brown rice.
