1 bunch Broccoli
1 small onion - diced small
1 clove garlic - diced
1 tsp. thyme
3 cups chicken broth
1 pkg. shredded white cheddar cheese
1 tbl. butter
1 cup milk or half and half

Directions:
Directions:
Blanch broccoli in water for 10 minutes, and set aside. Saute onion in small skillet.

In a pot add 2 tablespoons of Olive Oil and 2 tablespoons of butter, saute onion, and garlic, add 2-3 tbls of flour to create a rue then add chicken broth. Add 1/2 of the broccoli (chopped to bite size) to the pot.

The other half of broccoli put in blender with a 2 tablespoons of chicken broth and puree. Add blended broccoli and chicken broth to soup in pot.

Stir in 1 cup of milk or half and half, add cheddar cheese and stir. Soup should start to thicken by this time, adding in another tablespoon of butter adds the best taste.

Mom served me this creamy soup using Lactaid milk, a special milk she bought for the recipe because she thought I was lactose in tolerant. I tried to explain that I'm actually allergic to cow dairy. She didn't believe me, so I ate it. Within 15 minutes, I had hives all over my body!
