3 Ripe plantains cut into cubes.
1/2 Cup Olive Oil
1/3 Tspn ground ginger, salt and pepper

Directions:

Heat Oil

Mix together the cubes of ripe plantain with
ginger,salt and pepper.

Drop into oil and turn on each side every minute.

Remove from oil after 3mins and drain on paper towel.
