2 cups of cooked chicken, cut up
1 lb. grated Monetery Jack Cheese
1 medium onion, chopped
1 doz. flour or corn tortillas
1/4 cup butter
2 T. flour
1 can or 2 cups chicken broth
1 cup sour cream
2 jalapeno pepper, chopped

Directions:
Directions:
Soften tortillas by dipping in hot oil. Drain in paper towels. Fill tortillas with chicken, onion and cheese, roll up and place in a large, shallow pan.
Sour Cream Sauce:
Melt butter; add flour and broth. Cook until thickened. Add sour cream and cook until hot. Do not boil. Add peppers. Pour sauce over enchiladas and bake 20 minutes at 350.
