2 tbsp. sugar
3 tbsp. water
2 tbsp. instant coffee
12 oz. chocolate chips
7 eggs - separated
1 tsp. vanilla
1/2 pt. whipping cream
1 pkg chocolate wafer (or scrape the filling from Oreos)

Mix first 4 ingredients in double boiler. Add egg yolks, one at a time, and beat until smooth. Add vanilla and cool. Whip egg whites and fold into chocolate. Crush chocolate wafers. Layer the 1/3 of the crumbs into a 9-inch square pan. Add half of the chocolate mixture, followed by a layer of crumbs, then the rest of the chocolate followed by the rest of the crumbs. Chill. Remove from refrigerator one hour prior to serving.
