Ingredients: 1 pound JENNIE-O TURKEY STORE® Extra Lean Ground Turkey 1 spray olive oil cooking spray 1 Tbsp reduced-sodium taco seasoning or salt-free Southwest Chipotle Seasoning blend (optional) 4 (3-inch) whole wheat low carbohydrate tortillas, warmed 4 Tbsp fat-free sour cream 1 1/3 cups shredded romaine lettuce 1 cup seeded and chopped tomato 1/2 cup salsa

Directions:Heat a large nonstick skillet over medium-high heat. Remove the pan from the heat and lightly spray with olive oil spray. Return pan to the stove top and add the turkey and seasoning, if desired. Cook, breaking into chunks for 10 minutes or until lightly browned and no longer pink.
Transfer the turkey to a plate; cover to keep warm. Starting at one side, evenly spread 1 tablespoon of sour cream over two-thirds of each tortilla. Spoon the reserved turkey over the sour cream. Top with the lettuce, tomato and salsa. Roll up tortilla burrito-style and serve immediately. Serves 4. Yields 1 roll up per serving. |
