2 c mixture of onion, bell pepper and celery
2 T butter
2 cloves garlic minced
2 c chopped tomato with juice
1 bay leaf
1 t paprika
1 t thyme
2 T worchestershire sauce
1 t hot pepper sauce
1 T cornstarch

Directions:
Directions:
Finely chop onions, bell pepper and celery to make 2 c total mixture adjusting ratio to taste. Saute mixture in butter til beginning to soften. Add minced garlic and saute a little longer. Add tomatoes with juice, bay leaf, paprika, thyme, worcesteershire sauce and pepper. Simmer over low heat stirring occasionally for 10 to 15 minutes. Combine corn starch with 1/4 c cold water and stir into mixture til well thickened. Adjust seasonings, pour into jar and refrigerate til needed. For use warm and serve over dishes such as eggs creole. Should be prepared the day before along with grits molds for eggs creole.
